Chewy Gingerbread Bars with Cream Cheese Frosting

I started making these several years ago when I had a boxed gingerbread cookie mix. I had run out of time, (story of my life), and decided to just make bars instead of cookies. So much quicker than rolling out your dough and finding all of your cookie cutters. What? You always know where your cookie cutters are?? Whatever.
Anyway, whether you are super organized and your cupboards and pantry could be displayed in a magazine shoot – or you are just a bit scattered and have a million things going on … these Gingerbread Bars with Cream Cheese Frosting are simply the best. And easy too.
No rolling or cutting. Just press the dough into your prepared pan, get a little up the sides to hold all your frosting in place. You do want to devour a corner piece with your pinkys up and not get cream cheese frosting all over the place, right? The corners are where it’s at. Leave those messy inside pieces for after everybody leaves and you’re settled into the couch with a blanket, your sweats and the remote.
That’s right. Spread on lots of frosting edge to edge. The spices in the gingerbread will counterpoint the sweetness of the frosting for the perfect holiday dessert tango in your mouth. Your taste buds are gonna get all satiated and you won’t even have to suffer through a second-rate piece of your distant-cousin-thrice-removed’s pumpkin pie.
I always leave some “unsprinkled” for the man I married that prefers his cakes unfrosted. He digs the cream cheese frosting on these gingerbread bars, but he draws the line at sprinkles and/or Sugar in the Raw. (More sprinkles for me).
The best part? If you line your pan just right, it can still be perfectly clean when you are finished! (If you are a Stepford Wife and just love doing dishes, you have definitely landed on the wrong blog).
- 1/2 Cup Butter softened
- 1/2 Cup Granulated Sugar
- 1/2 Cup Brown Sugar
- 1 Egg
- 1 Teaspoon Vanilla Extract
- 1/4 Cup Molasses
- 1 Teaspoon Cinnamon
- 1/8 Teaspoon Ground Cloves
- 1/8 Teaspoon Nutmeg
- 1/2 Teaspoon Ground Ginger
- 1/2 Teaspoon Salt
- 2 Cups All-Purpose Flour
- 1 Teaspoon Baking Soda
- 4 Ounces Cream Cheese softened
- 1/4 Cup Butter softened
- 1 Cup Powdered Sugar
- 1 Teaspoon Vanilla Extract
Preheat oven to 325ºF.
Line 12"x 9" pan with foil and spray with nonstick cooking spray before setting aside.
Combine butter and sugars together in stand mixer or large bowl.
Stir in egg, vanilla and molasses. Whip for 2 minutes and then add in remaining ingredients. Mix until dry ingredients are just combined.
Press into prepared pan and bake 20-22 minutes or until edges just begin to brown. Cool completely.
Whip cream cheese, butter, powdered sugar and vanilla together until creamy. Adjust powdered sugar and vanilla to taste.
Spread frosting onto bars, cut into squares and ENJOY!
These Gingerbread Bars freeze very well and are fantastic warm or chilled.
