Blueberry Lemonade Granola

Granola is one of the many foods that I didn’t really eat when I was growing up. I don’t recall anyone ever offering me any or even seeing it in grocery stores. And if Quaker and Nature Valley were manufacturing it in bar form back then – well, I definitely was not in on it.

If I ever gave any thought whatsoever to granola, it would have been my judgment that only 2 kinds of people ate it: hippies & Euell Gibbons. Not that I had anything against either. I was just really naive about the food world. (True story – I actually had never seen broccoli before the age of 16. I thought it was some kind of “new vegetable”). Does “naive” still cover it??

Well, this generational picky eater broke free and became quite the adventurous foodie. I’m still not completely on good terms with squash, and  will never welcome the co-mingling of my foods, but granola has been a staple in our home for … oh roughly a few decades.

I’ve also been known to forage in the forest for food and only use homemade deodorant, so maybe the older and wiser I become, the more I have in common with hippies & Euell.

Last year I was at a local Farmers’ Market, and along with the usual suspects, was a vendor selling jars of granola. I sampled each variety and claimed best in show title for the Lemon Blueberry and a Saffron number. They were so very different from each other, yet I could not decide which was my favorite among favorites. (The rest of the family unanimously and without hesitation chose the Lemon Blueberry).

It was $20 for the 2 jars or 1 for $12. Plus, if you took the empty jar back to the market, they would refill it for $8. Always a sucker for a good deal, I purchased my 2 favorites. Then proceeded to move far enough away that it didn’t make sense to pass by 4 or 5 markets just to go to the one that would refill my granola jars at a bargain price.

So every week or so I would notice the empty jar in my office and make a mental note to try to duplicate the beloved Lemon Blueberry Granola. And finally, just last week, I did. I can’t tell you for sure which one is better, because frankly – after almost a year I just remember that I really liked it.

As for my Blueberry Lemonade Granola? I really like it, I know exactly what is in it, it’s easy to make and at a fraction of the cost. Winner-Winner, Blueberry Lemonade Granola for Breakfast, Lunch & Dinner. (Hey, it might catch on).

 

Blueberry Lemonade Granola

Blueberry Lemonade Granola

INGREDIENTS:

 

  • 3 Cups Rolled Oats
  • 1 1/2 Cups Almonds, coarsely chopped
  • 1 1/2 Cups Pecans, coarsely chopped
  • 1/2 Cup Sweetened Shredded Coconut
  • 1/2 Cup Honey
  • 1/3 Cup Olive Oil
  • Juice from 2 Lemons
  • Zest from 2 Lemons
  • 1 Cup Dried Blueberries

DIRECTIONS:

 

  1. Preheat oven to 350ºF and line baking sheet with parchment paper.
  2. Combine oats, nuts and coconut in a large bowl and mix thoroughly.
  3. Add oil, honey, berries, zest and juice; stirring well.
  4. Spread mixture onto baking sheet and bake 1 hour; checking and stirring every 15 minutes.
  5. Remove from oven and let cool at least 30 minutes.
  6. ENJOY!
